What's New Wednesday: Starlite

Not new, but new to me. Starlite, located on India street, opened it's hexagon entryway about six years ago and has been serving craft cocktails ever since. Deemed to have the best mules in San Diego, Starlite offers quality drinks, yummy food and custom interior design. And their wine pour isn't too bad either. Stop on by for happy hour seven-days a week, starting at 5pm (4pm on Fridays). You are welcome. =)

Motivation Monday: Stress Free

I had a good two-weeks at which I felt at peace about everything - from my work load, to the hubby's job situation, our families, and the never ending to-do list. Unfortunately that zen-like attitude has been replaced with my normal anxiety ridden mental state. And since I had a taste of the aforementioned, I obviously prefer to adapt to the "let the chips fall as they may" outlook.

So, here are 12 easy steps to kill stress.
  1. Make quiet time: Whether you meditate daily, go to the gym three times a week, practice yoga, go hiking on the weekends, or just spend an hour a night with a book, you need to create a space where you can clear your mind of everything that’s dragging at you.
  2. Stop procrastinating: You can't put off important tasks, but you can eliminate worrying about said chores. Just start somewhere. You will start to see the light at the end of the tunnel.
  3. Write everything down: Create a list, prioritize and update. I create a list every Friday that incorporates the three main aspects of my job (volunteer, teen book club and scholarship) as well as administrative duties. I also include my personal to-do list, such as thank you cards, important phone dates, house projects and presents I need to purchase. This helps keep my life organized thus less stressful.
  4. Eat better: A good diet can help your body handle the effects of stress. As a general rule, eat as much as you can from the "edges" of your supermarket - such as produce, bakery, butcher counter, and dairy case - and save the junk food in the "middle" of the grocery store for a reward/treat.
  5. Make family time: Make an effort to eat one meal a day with your family (or with friends if you’re single). Better yet, prepare at least one home-cooked meal a day with your family/friends.
  6. Talk it out: Bottling up your frustrations, even the little ones, leads to stress. Learn to express dissatisfaction (in a constructive, non-hurtful way) and voice your concerns to someone close to you.
  7. Prioritize: Figure out what in your life actually needs attention. Know what you can easily let slide - and what you can drop entirely - and focus your energy on things that will actually make a difference in your life.
  8. Have routines: Having a set routine means you don’t have to worry about what comes next; after a while, it becomes second nature.
  9. Accept interruptions gracefully: Don’t let your rituals become so rigid that you can’t function if they’re interrupted. Leave yourself enough wiggle room to adapt to changing conditions.
  10. Know when to quit: Don’t stand for employers, friends, or a spouse who treat you badly. Decide how much of yourself you’re willing to put into a relationship, job, or activity; when you cross that line, walk away and don’t look back.
  11. Pay attention to yourself: Notice when you feel stressed and determine the cause. Pay attention to your body and emotions and figure out whether the things you’re doing are fulfilling your own definition of a good, productive life - or somebody else’s. Give up unnecessary competition.
  12. Love: Build relationships. Share yourself. Feel human warmth.

Often I get a "hmm" when it comes to my fashion choices but I don't mind. I like taking chances, I lean towards weird things, and I beat to the sound of my own drummer. Enter: tiger and/or feline prints.

It's no secret I like love cats - my Marley is my family. My son if you will. And lately I like to celebrate my weird "cat lady" traits - purchasing shirts, socks, leggings with feline markings. I think it's fun - and I like to incorporate said items with conservative looks. It's like a surprise.

What's New Wednesday: Rocket Launch

While visiting my dad in Cape Canaveral, Florida we had the unique opportunity to witness a rocket launch! Such a neat experience - one I will not forget. The clouds were dense; so, we really felt the launch more than we saw the vehicle. But regardless, it was so fascinating.

Tasty Tuesday: Peachy

Grilled Peaches with Honey & Vanilla Ice Cream

I love the smell, feel and taste of peaches. At the store yesterday, I was drawn to their aroma and immediately purchased a bag of peaches for grilling. That's right: grilling. Check this out!

Ingredients:   
  • peaches halved with pit removed 
  • vanilla ice cream (optional) 
  • honey to drizzle 
Heat grilled to about 350 degrees Fahrenheit. Place peaches on grill flesh side down for 4 to 5 minutes. Flip for an addition 4 to 5 minutes. Remove and serve warm with a scoop of vanilla ice cream. Drizzle with honey. Yum. Tastes like summer.

Today would have been Leroy's birthday. Last year on this very day, Leroy jumped out of an airplane for the third time in his life. It's hard to put into words what it's like to see a man realize his dreams, no matter what age. It was a lesson that I will carry with me. Thank you, Leroy for leading by example. I will never forget you.

Feels Good Friday: Florida!

Hey friends, family and readers! Just wanted to report from Florida. "It's just another lousy day in Florida" (that's for you, Amanda!).

Our trip kicked off with a WONDERFUL flight. I know what you are thinking, "really?" But seriously the best yet. The hubby and I had first class, and this was my first experience with such great service. Think 6am drink with a twist, champagne, warm breakfast, cheese/cracker plate, free movies/tv, bubbly water (hate sparkling water but took it anyway because it was free and fancy!) and for the kicker? Freshly baked (according to the menu) cookie served with milk! I felt like I was flying for the first time. Thanks, American Airlines. (Now, I have a distinct feeling my trip home via coach will not have the same affect on me. Doh!)

Then dad treated us to dinner at Port Canaveral - a place called Fish Lips. Turns out I have been there before with my good friend, Megan; that was just a foggier evening. =)

Today? Bike ride to the ocean, rocket launch and who knows. But it's Feel Good Friday and we are in Florida!

Thrifty Thursday: Florida Packin'

As you read this, I'm en route to Cape Canaveral, Florida to see my dad. It's been almost two-years since we have seen each other; so, I'm very excited to give him a big hug. But visiting Florida mid-July is certifiably nuts; so, I had to be creative in my packing. Little to no layers but plenty of options due to humidity and sweat (YUCK).
Packing List: (I'm known to over pack, types the girl who brought 14 dresses to Italy in a carryon!)
  • Four sandals
  • One flip-flop
  • Running shoes
  • One large tote bag for plane
  • One side-saddle purse
  • One pair of earrings (my more expensive pair; I'll wear on the plane)
  • Two bracelets
  • One watch
  • Three necklaces (my expensive one I wear on the plane)
  • Two pairs of workout shorts
  • Two workout shirts
  • Two short dresses for day/night
  • One long skirt w/ tank top
  • Two cover-ups for beach (long maxi & plain short dress)
  • Crochet shorts (finally wearing 'em!) w/ plain tee & chambray cover
  • Bermuda shorts w/ shell top
  • High/low skirt w/ printed tee
  • Pajamas w/ cubbies tee & long shirt (just in case the air conditioned condo is too cold!)
And I'm wearing my black pants, a flowy top and cardigan for the plane ride. I brought a plain tee to wear on the plane ride home with same said black pants. Creative? Nah.

Of course, I'll have my latest book in hand, nook (with my obligatory work read) and 30andfaddy laptop in tow!

Tasty Tuesday: Pretzel Bun

Pretzel is back in a BIG way! So, we thought we would make our own pretzel buns for some grillin'. Here is the recipe to make your own pretzel bun. Warning: this is a lot harder and messier than I anticipated. If Vons or your local supermarket has pretzel buns already packaged, I highly suggest going that route. You have been warned!

  • 1 cup milk
  • 1/4 cup light brown sugar
  • 2 tablespoons honey
  • 1 packet active dry yeast
  • 2 tablespoons unsalted butter
  • 2 small cloves garlic, grated
  • 3 cups all-purpose flour, plus more for dusting
  • 1 cup bread flour
  • 1/2 cup baking soda
  • Pretzel salt or coarse ground sea salt, for sprinkling
  •  
    In a small saucepan, heat the milk, 1/2 cup water, sugar and honey to 105 to 110 degrees F. Add to the bowl of a stand mixer. Sprinkle the yeast over the water mixture and wait for at least 10 to 15 minutes until the yeast blooms.

    In a separate saucepan over medium heat, add the butter and garlic and cook until the butter is melted and the garlic is fragrant, 2 to 3 minutes.

    Combine the all-purpose flour and bread flour in a mixing bowl.

    Add the flour mixture to the bowl with the blooming yeast, and then add in the melted butter and garlic mixture. Mix on medium speed until the dough has come together and is smooth and elastic in texture and pulling away from the sides of the bowl, 5 to 7 minutes.

    Line 2 baking sheets with silicone mats. Turn the dough out onto a lightly floured cutting board and form into a ball. Cut into 4 equal pieces, and then cut those in half to form 8 equal pieces. Using your hands, roll each piece into a ball and place onto a prepared baking sheet. Cover with a dish cloth and let them rest in a warm place for 12 to 15 minutes.

    Once rested, lightly dust your work surface again and roll the balls into 7-inch logs. Place onto the other prepared baking sheet, cover, place back in the warm spot and let rest for an additional 30 minutes.

    Preheat the oven to 425 degrees F. Place one oven rack high and one low. Line 2 more baking sheets with silicone mats or parchment paper.

    In a large pot, bring 8 cups water to a boil, and then add the baking soda. In batches, place the dough in the water and cook for 30 seconds on each side.

    Using a slotted spatula, remove the logs and place onto the prepared baking sheets. Sprinkle the logs with pretzel salt as they come out of the water, to ensure the salt sticks. Then cut 3 diagonal slits on top of the bread, not too deep.

    Bake for 10 to 13 minutes, rotating between the top and bottom racks of the oven halfway through the cooking.

    Motivation Monday: Love your job!

    Lately I have heard from several peers, colleagues and friends that their job isn't satisfying. So, if you are feeling under appreciated, overwhelmed...or just whelmed (there's a tail end of one of my favorite movie quotes), here are 12 steps to love your job.
    1. Get motivated to face the day: On the way to your workplace, think of how the work allows you to have your life outside of it, such as a great social life. A positive attitude will make the day more pleasant and productive.
    2. Keep your work in perspective: You can only do the best you can in any situation. Look beyond yourself and your work, and consider the bigger picture. Do some voluntary work to gain a broader outlook. Find a way to contribute to society in general.
    3. You are more than your work: Do not allow your identity to be strongly tied to your job or position. And stop thinking your work life “should” be a certain way. Such expectations deter you from enjoying what you accomplish daily.
    4. Plan your time and create a to-do list: In this list, include long term projects as well as the more imminent projects. Prioritize your to-do list and focus on the most important things first. When performing any task, ask yourself – is this the best use of my time?
    5. Concentrate on the task at hand: Do not let yourself be distracted by worrying about your pile of work or the undesirable situation you may find yourself. Stay in the moment.
    6. Be clear about what’s expected of you: The more clear and upfront you are with your manager and the other people you work with, the better it will be for you in the long term.
    7. Delegate wherever appropriate: Always remember the “3D” rule – do it, dump it or delegate it – never handle a piece of paper twice.
    8. Have regular breaks: Get away from your normal workplace even if only for five minutes. Try taking a break from the laptop, emails and leave the cell phone behind. Make sure that you take a lunch break – it's not just for food but also for fresh air and a mental break.
    9. Learn to relax: No matter how challenging the work becomes or how demanding your bosses might be, at the end of the day it is only a job and you are much more than that. In years to come, you will look back and wonder what the fuss was about.
    10. Make your workplace more pleasant: Contribute towards creating a pleasant work environment. Do not gossip in the office as it just creates negativity all around (learning this!). Do not listen to any gossip either. Learn to have more fun at work. Laugh more and chill out. Perform with a more fun orientated approach.
    11. Review your day before you leave for home: Look at what worked and what could be improved upon for the next day. If you feel satisfied with the day’s work, then why not reward yourself later that day. You deserve it.
    12. Switch off once you leave work: You are already at work a third of your time, so do not continue to keep it buzzing in your head during your free time. Mentally say goodbye to your work space the moment you leave for home.

    No, not a white wedding dress. Besides, I went for ivory. I referencing just a good ol' fashion white dress. My friend, Sara is hosting a Diddy inspired white dress party; so, the search is on for a white dress! I typically shy away from this color for obvious reasons - prone to spillage! But I'm hoping to find one that looks cute, can be re-purposed and isn't too expensive (just in case). And speaking of 'just in case', I'm sticking to clear drinks!     What's New Wednesday: FREE Makeovers

    Feeling like you need to make a change? But do not want to spend a ton at the salon or store? Here are some ideas to enhance your look for little to no money. Source: Laurenconrad.com
    1. Change your part.
      Mix it up! If you part your hair to the side, try parting your hair down the middle. Similarly, if you part your hair down the middle - try the side. You will be surprised how much it changes your facial features. And the best thing about it is that you can go back to your classic favorite in a matter of seconds.
    2. Try a bold lip or a cat eye.
      While I have never tried the cat eye, I love the drastic, bold look. The next time I have a GNO or date night, I might just give it a whirl! Here is a tutorial for the winged eyeliner virgins like me. Not ready to use liquid eyeliner? Try using a bold red, coral, or pink lip color for an updated look.
    3. Make a mask with things you already have in the kitchen.
      It’s crazy how many face masks you can make with items you use for cooking your meals everyday. Try this Greek yogurt mask which calms acne and hydrates dry skin. You can also create a mask by mixing up ½ avocado and the juice from ½ of a lemon. So grab your leftovers and get to work for refreshed and moisturized skin. (See more recipes here).
    4. Try a natural teeth whitener.
      Drugstore whitening strips are great for brightening up your pearly whites. But if you’re looking for a wallet-friendly option, try mixing baking soda and lemon juice into a paste, then brushing it onto your teeth with a toothbrush. Leave the mixture on for about a minute, then brush it off. According to Health.com, the baking soda will remove stains from your tooth enamel while the citric acid in the lemon juice will have a bleaching effect.     5. Stand up straight.
      Good posture can make you look skinner, appear more confidant and of course, strengthen your back muscles. When I make an effort to stand up straight during the day, I find myself with a perky attitude and a more carefree disposition. Slumping over will do just the opposite, leaving you feeling lethargic and jaded. Stand up straight, ladies (and men!). Here are some easy steps to improve your posture.

    Tasty Tuesday: Chicken Noodle

    I know - soup doesn't sound appetizing in the dead of summer. In fact, as I type this I am sweating it out in the hottest room in our house. Yuck! But with Leroy's passing and my heart aching, I wanted to reminisce on his favorite (and most tasty) recipe: chicken noodle soup. While Leroy didn't follow a recipe, I found one that reminded me of his soup. So, here you go! Enjoy - maybe when it rains outside or there is a much needed coastal eddy.
     
    Ingredients:
    • 2 tablespoons extra-virgin olive oil
    • 1 medium onion, chopped
    • 3 garlic cloves, minced
    • 2 medium carrots, cut diagonally into 1/2-inch-thick slices
    • 2 celery ribs, halved lengthwise, and cut into 1/2-inch-thick slices
    • 4 fresh thyme sprigs
    • 1 bay leaf
    • 2 quarts chicken stock, recipe follows
    • 8 ounces dried wide egg noodles
    • 1 1/2 cups shredded cooked chicken
    • Kosher salt and freshly ground black pepper
    • 1 handful fresh flat-leaf parsley, finely chopped
    Place a soup pot over medium heat and coat with the oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken stock and bring the liquid to a boil. Add the noodles and simmer for 5 minutes until tender. Fold in the chicken, and continue to simmer for another couple of minutes to heat through; season with salt and pepper. Sprinkle with chopped parsley before serving.

    Chicken Stock:
    • 1 whole free-range chicken (about 3 1/2 pounds), rinsed, giblets discarded
    • 2 carrots, cut in large chunks
    • 3 celery stalks, cut in large chunks
    • 2 large white onions, quartered
    • 1 head of garlic, halved
    • 1 turnip, halved
    • 1/4 bunch fresh thyme
    • 2 bay leaves
    • 1 teaspoon whole black peppercorns
    Place the chicken and vegetables in a large stockpot over medium heat. Pour in only enough cold water to cover (about 3 quarts); too much will make the broth taste weak. Toss in the thyme, bay leaves, and peppercorns, and allow it to slowly come to a boil. Lower the heat to medium-low and gently simmer for 1 to 1 1/2 hours, partially covered, until the chicken is done. As it cooks, skim any impurities that rise to the surface; add a little more water if necessary to keep the chicken covered while simmering.
     
    Carefully remove the chicken to a cutting board. When its cool enough to handle, discard the skin and bones; hand-shred the meat into a storage container.
    Carefully strain the stock through a fine sieve into another pot to remove the vegetable solids. Use the stock immediately or if you plan on storing it, place the pot in a sink full of ice water and stir to cool down the stock. Cover and refrigerate for up to one week or freeze.

I will miss your smile, courageous spirit, popcorn, bingo-calling skills, unconditional love, apples, sound advice, adventures at the zoo, monthly dinners, your home-made chicken noodle soup, our conversations about life, bear hugs, clove smell, inevitable coffee-stained finger prints on all my work papers, support, Scotch, copious amounts of snacks, every Tuesday and Wednesday at Words Alive, kindness, happy demeanor, Skydiving excursions (just you, not me!), positivity and laughter. There is a big hole in my heart, but all the life lessons you bestowed will be with me forever. I love you.

    What's New: Tavern

    Tavern at the Beach finally re-opened last Friday, and my friends and I got a chance to experience the updated venue for my 32nd birthday! New walls, floors, table, chairs, bar top, bathrooms and now a kitchen! A bar once partially owned by Michael Jordan (yes, I verified this fact after being made fun of for YEARS!), Tavern is a great place to get a drink, eat some yummy food and get your dance on. Jordan still occasionally stops in for a beer and cigar (not yet confirmed if he sports jockey underwear, however). Regardless, check it out!

    Tasty Tuesday: Patriotic Snacks

    I'm so ready to celebrate Independence Day, it isn't even funny. So, I'm doing some research for fourth of July snacks to bring to the party. Want some ideas? Here you go! Thanks, internet (hehe).

    American Flag Fruit
    Easy enough. Just wash, cut up and assemble blueberries, bananas and strawberries. And align to mimic the American flag. Healthy, easy and perfect for a July 4th celebration.

    Red & Blue Ice Cubs
    Fill your ice tray with washed and cut blueberries and strawberries. Freeze. Serve with your favorite clear cocktail or white wine! Festive enough, right?

    4th July Appetizer Skewers
    Assemble Kalamatta olives, cubed cheddar cheese and cherry tomatoes. Done.
